Ingredients:
Pulp of 1 passionfruit
1 Egg white
30ml Saccharum
15ml Lime juice
15ml Simple syrup
Method:
Dry shake all ingredients to emulsify, then shake again with ice. Double strain into a coupe glass and garnish with passionfruit seeds or a mint leaf.
